I would like to assign Adobe reader to open a .pdf file, now PDF Viewer opens it.
Where do you assign a program to open something?

right click on pdf. Pick assign run action.
to find adobe reader location and name in terminal

I don't use adobe reader so not sure which command to give to bring up location of adobe reader.
